Slate.com has a worthwhile feature comparing the environmental costs of soymilk vs. cow’s milk. There are some parts of the analysis that make me raise an eyebrow, like when packaging and transportation is factored in. But on the whole, it seems as though the humble soybean kicks the cow’s butt.
Weirdly, the article, though heavy on analysis, doesn’t end with any sort of conclusion. It’s like they cut out the paragraph that sums everything up, which is annoying since soy seems to have won by a landslide. Link.
