Andrew Revkin’s DotEarth column in yesterday’s New York Times is interesting. Half of it is devoted to Michael Pollan’s vision of backyard gardening, while the other half asks if this sustainable concept could one day be joined by vat meat. I don’t think there’s any doubting that today’s factory farmed burger topped with Mexican tomatoes would be far more compassionate and sustainable if the burger came from vat meat, and the tomatoes from your backyard. Perhaps the ideal mix of high and low tech, all in one meal. Link.
