Jack Norris, RD just updated his Vitamin A intake recommendations at VeganHealth.org. Interestingly, a medium-sized carrot won’t give you a full day’s supply of Vitamin A, whereas a medium-sized sweet potato will. This is worth knowing even if you take a multivitamin, since it’s now looking as if many multivitamins contain less-than-ideal levels of Vitamin A. Link.
Wonkish Footnote: There’s actually no preformed Vitamin A in vegan foods, but rather “retinol activity equivalents” that your body converts to Vitamin A.
