Thanks to budget cuts in Utah, the state was about to terminate its meat inspection program. That would have forced meat plants in Utah to have federal meat inspection instead, so the slaughterhouses decided to pony up some extra money to keep the state inspection program doing.
So, basically, Utah slaughterhouses are paying to avoid federal inspection. I wonder what would happen to meat sales in Utah if this scarcely-reported fact was brought to the attention of state residents. Link.
