I adore my diet: zero white flour or white rice, and essentially nothing processed. Pretty much nothing but fruit, giant salads, whole grains, beans, and nuts. But if you tried to push my current diet on me back in my meat-eating days, I’d have regarded it as crazy and unsatisfying. I’d have quit by my third day and gone back to cheeseburgers.

The royal road to a super healthful vegan diet may take you through a few months or years of Daiya and Gardein—or even Tofutti Cuties. It’s all cool, as long as you don’t fuck up on getting your basic nutrition needs met.
