BBQ Seitan Quesadillas with Pineapple Salsa


My idea of a quesadilla couldn’t be simpler: a sprouted wheat tortilla, some Daiya pepperjack cheese, some tomato sauce or hot sauce, and maybe some sliced olives. Nuke it, then fold it into quarters.

This has my version beat by a mile but it’s a lot more complicated. Recipe here.
