Meat Tied to Severe Allergic Reactions

What better way to start your Monday than to encounter a brand new health concern regarding meat? Researchers have just linked sugar molecules in meat to previously unexplained cases of anaphylactic shock. The study’s lead researcher says:

What we’re finding is that this traditional notion of allergy to meat being very rare may, in fact, not be true,

The reason it’s taken so long to make this connection is that it can take up to six hours after eating meat for people to show the allergic reaction. Until now, nearly all food allergies were thought to manifest within minutes, or—at most—a couple of hours. (Via Hawthorne.) Link.
