Vegan chef Chloe Coscarelli appeared on the Today Show this morning to promote her brand new book, Chloe’s Kitchen. She made some delicious looking avocado pesto and followed it up with a dessert of cinnamon espresso chocolate chip cookies.
I love the approach she’s taken in her cookbook, as it’s exactly the sort of thing that will appeal to omnivores who don’t want to stray too far from familiar tastes. In her book, Chloe sets about, “reinterpreting 125 of America’s favorite foods with great-tasting ingredients and clever techniques.”
