Roasted asparagus couldn’t be easier — or more delicious. This recipe is adapted from 1,000 Vegan Recipes © 2009 by Robin Robertson.
1 pound asparagus, trimmed
Olive oil
Salt and freshly ground black pepper
Preheat the oven to 425 degrees F. Arrange the asparagus spears in a single layer on a lightly oiled baking sheet. Drizzle with a little olive oil and season with salt and pepper. Roast the asparagus until tender, 8 to 10 minutes, depending on the thickness of the asparagus. Serve hot.
