One of the keys to thriving as a vegan is to really explore all that the fruit and vegetable world has to offer. Most Americans think of kale as kale, not knowing that there are numerous varieties with radically different colors, flavors, and textures. I’d never heard of Red Feather Kale before today, but when I saw these organically grown bunches at my local market for $1.69 each, I immediately knew what I was having for dinner.
