People have been asking for my cashew cheese recipe ever since I mentioned it in Vegan: The New Ethics of Eating. Cashew cheese is a perfect pizza topping, and it’s also great for grilled cheese sandwiches. Eating it with sprouts on a bagel may also make you happy.
- 1 teaspoon lemon juice
- 1 Tablespoon tamari
- 1 Tablespoon olive oil
- 1 Tablespoon water
- 1 Tablespoon nutritional yeast
- 1 Tablespoon sliced or chopped jarred pimento
- 1 cup raw unsalted cashews
- 2 Tablespoons raw tahini
Put all of the ingredients in a food processor and process with blade until completely smooth. In a pinch, you can use a blender to do this, but chances are you’ll need to dilute the mixture with additional water to attain proper smoothness.
