Vegan Cupcakes

Vegan cupcakes represent the perfect storm of vegan desserts. Delicious. Adorable. Cruelty-free. They’ve taken the throne on the Food Network show “Cupcake Wars” (defeating a wide assortment of egg and dairy-based cupcakes), and there are even two different cookbooks entirely devoted to exploring their greatness: Vegan Cupcakes Take Over the World, and Ms. Cupcake: The Naughtiest Vegan Cakes in Town.

There’s no need to limit yourself to vegan recipes in order to make the vegan cupcake of your dreams. With a few simple substitutions, you can make almost any cupcake recipe vegan:

  • Margarine (such as Earth Balance instead of butter)
  • Egg Replacer (Ener-G or other substitutes in place of eggs)
  • Soymilk (in place of cow’s milk)
